Dairy production at FAF has gone through tremendous changes in the past few years.  The heard now grazes on the farms pastures and is no longer confined and fed cereals.  We have also partnered with Romeu Leite of the Yamaguishi Movement in Jaguariúna to provide the dairy operation with developmental consulting services.  Romeu is a qualified vet who also practices homeopathic veterinary medicine; under his guidance FAF sells milk to the local cooperative and produces cheese for the guests and friends of the farm.

Currently FAF produces five different kinds of cheese including Fresh Farmers Cheese, Mozzarella, Ricotta, Smoked Provolone and a local variety called “Half Cured”.
